Chocolate Brownie Cookies



Ingredients
Butter 100g
Sugar 3/4 cup
Egg 1
Vanilla 1 tsp
Flour 1 cup
Cocoa powder 5 tbsp
Baking soda 1/3 tsp
Salt 1/4 tsp

Whip the softened butter or margarine with the sugar in a mixer until fluffy and smooth. Add the egg and vanilla, and beat again. Then add the flour, cocoa, baking soda, and salt, and beat again.

The dough will be sticky. Refrigerate it for an hour or spoon it onto a greased baking sheet (a baking sheet lined with parchment paper will do). Roll the chilled dough into 3 cm diameter balls, place them on a baking sheet, and flatten them slightly with your hand.

Bake for 8-10 minutes in a preheated oven at 180°C (350°F), until the edges are firm. The center should be soft; it will firm up as it cools. Don't overcook the cookies, as they won't taste good. Remove them and let them rest on the baking sheet for 5 minutes. Then carefully remove them and place them on a wire rack to cool. Let them cool completely; they will firm up as they cool.
