Ingredients
Cottage cheese 300 g
Parmesan cheese 100 g
Egg 1
Flour 4 tbsp
Olive oil
Salt to taste
For the sauce:
Tomato in its own juice 300 g
Garlic 2 cloves
Basil 3 sprigs
Olives 3 tbsp
Olives 1 tbsp
Olive oil
Salt to taste
Ground black pepper to taste
Make the sauce. Peel and finely chop the garlic. Peel the tomatoes and cut into small pieces. Cut the olives into rings. Chop the basil leaves.
Heat the olive oil in a saucepan, fry the garlic, then add the tomatoes. Cook for 15 minutes over low heat. Add the olives, basil, and season with salt and pepper. Continue cooking for another 5 minutes.
Prepare the syrniki. In a bowl, combine the cottage cheese, grated cheese, and egg. Add flour (2-3 tablespoons) and salt. Mix well. Form the mixture into syrniki and roll them in flour.
Heat the olive oil in a frying pan and fry the syrniki on both sides until golden brown. Cover and cook until done. Serve with the sauce.
