Ingredients
Potatoes 750 g
Green onions 2 tbsp
Garlic 3 tbsp
Salt 1/2 tsp
Vegetable oil
Parsley 24 leaves
Peel and grate the potatoes. Place them in cheesecloth and hang them over a bowl or press them down with a weight to remove as much liquid as possible.
After a minute or two, drain the potatoes; the starch should collect at the bottom of the bowl. Carefully drain the liquid and mix the starch with the grated potatoes, chopped garlic, onion, and salt.
Heat a tablespoon of oil in a frying pan over medium heat. Drop in a tablespoon of the mixture, press it down with the back of a spoon, and form a pancake. Gently press a parsley leaf on top. Fry on both sides until crisp. Serve warm with any sauce.
