Ingredients
for the pancakes:
2 bananas
4 eggs
1/2 cup rolled oats
Cinnamon
1 tsp baking powder
For the cherry sauce:
300 g cherries
1/2 cup water
Lemon zest
2 tsp cornstarch
In a small saucepan, combine all sauce ingredients. Cover and cook for 5-10 minutes over medium heat, stirring occasionally, until thickened. If the cornstarch thickens the sauce too quickly, add more water.
In a blender, combine the pancake ingredients. Blend for about 10 minutes until a smooth batter is formed. Fry the pancakes in a frying pan until golden brown on both sides. Serve with banana slices and cherry sauce.
