Ingredients
Cottage cheese 500 g
Egg 2
Banana 1
Flour 1 cup
Sugar 4 tbsp
Breadcrumbs 3 tbsp
Sour cream 1 tbsp
Baking powder 1 tsp
Baking soda 1/2 tsp
Vanillin 1 pinch
Salt 1 pinch
Vegetable oil
Mash the cottage cheese with a fork, add the eggs, sugar, and salt. Mix thoroughly. Use a blender if necessary.
In a separate bowl, combine the flour (pre-sifted through a sieve), baking powder, baking soda, and vanillin. Stir. Add to the cottage cheese mixture.
Knead into a stiff dough. If the dough is too runny (depending on the cottage cheese), add more flour. The dough should be thick, otherwise the syrniki will spread when fried. Don't overdo it with flour, though, or the syrniki will be tough. Use just the right amount of flour.
Peel the banana and cut into 0.5 cm slices. Form the syrniki into dough, place a banana slice inside, roll in breadcrumbs (you can substitute flour if needed), and fry in vegetable oil until golden brown.
Serve hot with sour cream, jam, and fruit.
