Pancakes with Caramelized Pears



Ingredients
for the pancakes:
Whole wheat flour 1 cup
Sugar 50 g
Salt 1 pinch
Vanilla 1 pinch
Baking powder 1/4 tsp
Egg 1
Milk 1.5 cups
Olive oil 1 tbsp

For the filling:
Pear 150 g
Honey 2 tsp
Butter 10 g

Mix all dry ingredients in a large bowl. Whisk the egg (or whites) and add the milk, mixing well.

Pour the milk and egg into the dry ingredients, whisking well to remove any lumps. Let the dough rest for 5-10 minutes. Then, fry the pancakes in a non-stick frying pan.

Meanwhile, halve the pears and remove the cores. Cut the pears into approximately 1 cm pieces, making slits lengthwise. Pour honey over the pears and let them simmer for about 5 minutes. This will take about 5 minutes.

Melt the butter in a frying pan. Add the pears (juice and honey optional) and simmer, stirring occasionally (to avoid mashing the pears), covered, for 5-7 minutes, until the pears are soft.

Serve the pancakes with the pears and honey-pear syrup and enjoy with a cup of hot tea.
