Cottage Cheese Muffins with Tangerines



Ingredients
Cottage cheese 400 g
Eggs 2
Butter 100 g
Tangerines 2
Flour 200 g
Starch 60 g
Sugar 180 g
Baking powder 15 g

Mix the cottage cheese, sugar, and eggs. If you prefer the cottage cheese flavor rather than the texture, it's best to mash or blend the cottage cheese before baking.

Add softened butter, flour, starch, and baking powder to the cottage cheese mixture. Knead the dough thoroughly.

Purchase the tangerines in a blender or meat grinder, or squeeze the juice by hand. It's best to do this by hand, because then the juice will be more pulpy (and some of the mandarin pieces will still end up in the batter).

If you fill the pan halfway with batter, the muffins will be level with the rim of the pan, creating a neat, even appearance. If you fill the pan more, the muffins will develop a rakish cap during baking.

Bake the muffins in a preheated oven or convection oven at 180°C for about 20-25 minutes (check for doneness with a dry matchstick test).

Let the finished muffins cool and dust with powdered sugar, if desired.
