Pears with Crispy Streusel



Ingredients
3 pears
2 tbsp sugar
3 tbsp lemon juice
2 tbsp Amaretto liqueur

For the cream:
500 ml milk
100 g milk chocolate
1 tbsp sugar
40 g corn starch
1/4 tsp vanilla essence

For the streusel:
70 g flour
50 g butter
30 g sugar
1 tsp spice mix
70 ml 35% cream

Peel the pears, remove the cores, and cut into small cubes. Place in a frying pan. Add 2 tbsp water, sugar, and lemon juice. Simmer, covered, for 6-8 minutes. Stir a couple of times. Cool and add the liqueur.

Chocolate cream: Mix the starch with 5 tablespoons of cold milk. Add sugar to the remaining milk, stir, and bring to a boil. Stir in the starch dissolved in the cold milk. Bring to a boil again and stir constantly until thickened. Remove from heat and add the chopped chocolate and vanilla essence. Stir until smooth. Cover with plastic wrap and let rest briefly.

Streusel: Melt the butter and let cool. Mix the butter with the powdered sugar, spices, and flour until coarse crumbs form. Wrap the crumbs in plastic wrap and refrigerate for 30 minutes. Preheat the oven to 180°C. Spread the crumbs evenly on a baking sheet lined with parchment paper and bake for about 10 minutes, until golden brown. Cool. 

Assembly: Place a layer of pears in the bottom of the ramekins, then top with chocolate cream. Sprinkle with spiced streusel. Refrigerate the dessert briefly, then whip the cream before serving and garnish each serving with a rosette and a few diced pears.
