Baked Potatoes with Herbs and Garlic


Ingredients
Potatoes 16
Salt 3 tbsp
Olive oil 2 tbsp
Garlic 4 cloves
Cumin 1 tsp
Rosemary 1/2 tsp

Cut the potatoes in half and place in a saucepan. Cover with water and add salt. Bring to a boil, reduce heat, and simmer until tender, about 10 minutes. Drain and return the potatoes to the saucepan.

Add olive oil, lightly crushed but unpeeled garlic cloves, crushed cumin, and rosemary. Mix well and leave to cool.

Lay 4 sheets of foil on a work surface and place one on top of each potato, ensuring each piece has a garlic clove. Wrap the foil and let sit at room temperature for 2 hours.

Preheat oven to 200°C (400°F). Place the pouches on a baking sheet and bake in the oven for about 15 minutes, turning occasionally, until the potatoes are heated through. Transfer to plates and carefully open the foil. Serve.
