Homemade Shrimp Noodles



Ingredients
Flour 200 g
Eggs 2
Water 1 tbsp
Shrimp 500 g
Cream 10% 200 ml
Lemon zest
Seasons

Lightly beat the eggs with a fork. Sift the flour into a wide bowl, make a well in the center, and pour in the eggs. Add water and knead to a smooth, elastic dough. Cover with plastic wrap and let rest for 30 minutes.

Meanwhile, prepare the sauce. Peel the shrimp, remove the heads, and devein them.
Heat the cream in a saucepan, add the seasoning, stir, and cook for 2 minutes. Add the prepared shrimp and lemon zest. Stir and cook for 4 minutes. Cover and set aside.

 On a floured surface, roll the dough out very thinly and lightly dust with flour. Fold the dough several times and cut into strips approximately 0.6-0.8 cm wide. Unfold the strips lengthwise and nest them. Let them dry slightly.

Boil 3-4 liters of water in a large saucepan, lightly salt. Add the noodles and cook for 4 minutes. Drain in a colander. Place in the prepared sauce and heat through for 2 minutes.
