Khinkali


Ingredients
Ground beef 500 g
Water 500 ml
Flour 800 g
Onion 1 pc
Parsley to taste
Cilantro to taste
Ground black pepper to taste
Salt to taste

To prepare the dough, sift the flour into a deep bowl and mix with salt. Gradually add water until a smooth, elastic dough forms. Place the dough on a floured work surface, cover with a towel, and let rest while preparing the filling.

To prepare the filling, add chopped onion and finely chopped herbs to the ground beef. Season with salt and pepper, pour in 1/2 cup of water, and mix until smooth.

 Take 1/3 of the prepared dough, roll it in flour, form a rope, and cut into 1.5-2 cm wide pieces. Roll each piece of dough in flour and set aside.

Take one piece of dough and roll it into a circle the size of a tea saucer. Place a tablespoon of the prepared filling in the center of the circle, lift the edges of the dough on all sides, and pinch them tightly to form a "handle" on top of the khinkali. Continue to scoop up all the dough and filling in this manner.

Lower the prepared khinkali into a large pot of boiling salted water and cook for a few minutes until the khinkali float to the surface. Remove with a slotted spoon and place on a plate.
