Ingredients
800 g flour
2 eggs
50 g leeks
For the filling:
700 g mushrooms
4 onions
3 tbsp sour cream
1 tbsp flour
1 tbsp dill
1 tbsp lemon juice
1 tsp soy sauce
1 tsp butter
Dough: Pour 150 ml of water into a saucepan, bring to a boil, add the leeks, and simmer for a couple of minutes. Blend everything in a blender. Combine the flour, eggs, and mixture. Knead the dough thoroughly.
Filling: Chop the mushrooms and onion and fry in a frying pan with a little sunflower oil for 5 minutes. Add all the remaining ingredients, stir, and simmer, covered, for a couple of minutes.
Roll the dough into portioned balls. On a floured surface, roll the dough out as thinly as possible, place the filling in the center, and shape into dumplings.
For an even more intense color, add a few green leeks to the water (add some salt!) where they'll be cooking. Cook for just 3-5 minutes.
