Ingredients
Carrots 1000 g
Semolina 1/2 cup
Milk 1/2 cup
Eggs 3
Sugar 1 tsp
Breadcrumbs 1/2 cup
Vegetable oil 3 tbsp
Thinly slice or cut the peeled and washed carrots into strips. Place them in a saucepan, pour in the hot milk, add a tablespoon of butter, sugar, and salt. Cover and simmer over medium heat until tender, stirring occasionally to prevent burning.
When the carrots are done, sprinkle them with semolina and cook over low heat for 8-10 minutes, stirring occasionally. Then remove the carrots from the heat, add the egg yolks, mix well, and let cool. Make patties from the cooled mixture, brush with egg white, roll in breadcrumbs, and fry on both sides.
Serve the finished patties with sour cream.
