Ingredients
200g Rigatoni Pasta
150g Salmon
4 Cloves Garlic
1 Handful Pine Nuts
Spinach
3 Tbsp Olive Oil
Ground White Pepper
Sea Salt
Herbs
2 Tbsp Parmesan Cheese
Cut the trout into large cubes. Season with salt and pepper. Slice the garlic. Heat the olive oil in a frying pan and fry the garlic slices with the pine nuts until golden brown. Remove.
Toss the fish cubes in the same oil and brown them on all sides for 2-3 minutes. Remove and place in a bowl with the nuts and garlic. Lightly sauté the spinach in the same oil and rendered fish oil (or steam the spinach).
Cook the pasta. Place it on a serving platter, top with the trout cubes, garlic, and nuts, add the spinach, and drizzle with the fragrant oil from the pan. Garnish with herbs. You can sprinkle with two tablespoons of Parmesan cheese.
