Wash the pork and cut into large but thin pieces, then beat the meat thoroughly. Transfer the meat to a deep bowl and sprinkle with finely chopped garlic, salt, pepper, and other spices to taste. Let the pork marinate for 15-20 minutes. While it marinates, preheat the oven.
Slice the onion into thin half rings. Peel the potatoes and cut them into half rings. Grate the cheese on a coarse grater. By this time, the oven should be preheated to 180 degrees Celsius.
Pour vegetable oil onto a baking sheet and arrange the pork and onions in one or two layers. Season with salt and pepper, and brush with mayonnaise. Next, add a layer of potatoes, also brush with mayonnaise and salt, and sprinkle with grated cheese.
Coat the cheese layer with mayonnaise and bake in the oven for 1 hour.
