Place the sliced potatoes in hot oil over high heat and let them cook for 3-4 minutes, until the skin is golden brown. Then carefully turn them over with a spatula, reduce the heat to slightly lower than medium, cover, and cook for 7-9 minutes.
Gently stir, cover, and cook for another 7-9 minutes. Then add the onion or garlic, season with salt and pepper, and gently stir again. Cook over slightly higher heat, uncovered, until done.
Choose the desired browning level, and remember that potatoes come in different varieties, so the cooking time should also be adjusted accordingly.
