Rice casserole with vegetables and shrimp



Ingredients
1/4 cup rice
turmeric
paprika
pepper
garlic
broccoli
3 tbsp frozen vegetable mix
shrimp
curry
lemon juice
10% cream 50 ml
Parmesan cheese

Cook brown rice (1/4 cup rice per cup water). Bring to a boil and simmer for 15 minutes. Add seasonings: a pinch of turmeric, a little chopped garlic, a pinch of paprika, ground pepper – all to taste. Mix well.

Then cover tightly, remove from heat, and let sit for 40 minutes until the water is completely absorbed. It's best to cook the rice in advance and let it cool completely.

 Next, peel the fresh broccoli, wash it, separate it into florets, and boil it for 2-3 minutes. Alternatively, you can make things easier and use frozen broccoli. Add about 3 tablespoons of other frozen vegetables to the broccoli.

Layer the rice, vegetables, and king prawns (pre-cooked) into a baking dish. Sprinkle with curry powder and lemon-flavored pepper, and drizzle with a little lemon juice.

Now, bring 50 ml of light cream and 200 ml of water to a boil and pour over the dish (you can also beat eggs and milk instead). Add a little grated Parmesan cheese, and bake in the oven at 200°C for 25-30 minutes.
