Ingredients
1 avocado
1 apple
100 g lightly salted salmon
1/2 pine nuts
lettuce
arugula
cherry tomato
sesame seeds
50 g Parmesan cheese
1/2 lemon
For the dressing:
24 g wine vinegar
18 g mustard
14 g honey
22 g soy sauce
120 g olive oil
Peel the avocado, cut into small cubes, removing the pit. Repeat with the apple. Sprinkle the apple and avocado with lemon juice. Finely chop the fish, tear the lettuce leaves and arugula, chop the nuts not too finely, dice the cheese, and combine all the salad ingredients.
Mix all the dressing ingredients, pour over the salad, toss, spoon into small round bowls, press down firmly, and invert onto flat plates.
Garnish with cherry tomatoes, moistened on the bottom and dipped in sesame seeds.
