Garlic and Pepper Fries



Ingredients
4 potatoes
Sunflower oil

For the seasoning:
1/4 cup Parmesan cheese
1 teaspoon red pepper flakes
1/2 teaspoon parsley

For the garlic oil:
3 cloves garlic
1/2 teaspoon salt
1 egg yolk
1 teaspoon Dijon mustard
1/2 cup sunflower oil
1 pinch ground red pepper
Tabasco sauce

Heat the oil to 160°C (325°F) either in a deep fryer or in a large saucepan. The oil should completely cover the potatoes. Combine all seasoning ingredients and set aside.

Crush the garlic cloves with the edge of a large knife. Sprinkle with salt and mash the garlic into a paste with the knife. Place in a bowl and mix with the yolk and mustard. Mix thoroughly. Gradually pour in the oil and mix until creamy.

Cut the potatoes into thin strips. Pat dry with paper towels.
Fry the potatoes in small batches for 4 minutes. The potatoes will not be crispy yet.

Transfer to a paper towel to remove excess oil. Increase the oil temperature to 190°C (350°F). Once the oil is ready, fry the potatoes again until crispy and golden brown.

Remove from the oil and pat dry again. Season with salt immediately. Sprinkle with the prepared cheese and red pepper seasoning. Serve with garlic butter.
