Ingredients
Basmati rice 1 cup
Vegetable broth 400 ml
Dried apricots 100 g
Raisins 50 g
Nuts 50 g
Onion 1 pc
Turmeric 1/4 tsp
Cinnamon 1 pinch
Orange zest 1 tsp
Salt 1 pinch
Butter 1 tbsp
Soak the rice in cold water for 1 hour. Pour boiling water over the dried apricots and raisins for 10 minutes, then drain in a colander and pat dry. Fry the nuts in a dry, heated frying pan, stirring constantly, for 5 minutes. Peel, chop the onion, and fry in hot oil for 4 minutes.
Drain the rice in a colander, rinse with cold water, and shake well. Add to the fried onions and cook, stirring, for 1 minute. Pour in the broth and 50 ml of water, then add the dried apricots and raisins. Bring to a boil, reduce heat, add turmeric, cinnamon, and salt, and simmer, covered, for 20 minutes.
Remove the pilaf from the heat and let it rest, covered, for 5 minutes. Then add the nuts and orange zest, stir gently, and divide among bowls.
