Ingredients
For the dough:
Flour 6 cups
Eggs 3
Salt
Water
For the filling:
Butter 100 g
Cheddar cheese 250 g
Onions 4
Potatoes 10
Garlic to taste
Boil the peeled potatoes until very soft. Drain and reserve the potatoes in the pan.
Fry the finely chopped onion until golden brown and add most of the onion to the potatoes. Add the grated cheese and mash the potatoes. Season with salt, pepper, and garlic to taste and mix again (you can use a mixer).
Pour the flour into a large bowl, make a well in the center, and add the salt, lightly beaten eggs, and about 1 cup of water. Mix thoroughly, add more water if needed, and knead into a smooth, elastic dough.
Place the dough on a floured surface and roll it out thinly. Use a glass to cut out round flatbreads, place a teaspoon of the prepared filling on each flatbread. Brush the edges of the dough with a beaten raw egg and pinch to seal.
Place the vareniki in salted boiling water and cook until they float to the surface. Drain the cooked vareniki in a colander or sieve and serve hot with butter, melted butter, or sour cream.
