Ingredients
8 potatoes
1 lemon
1 bunch parsley
2 cloves garlic
Olive oil
Ground black pepper
Salt
Wash, dry, and finely chop the parsley along with two cloves of garlic. Remove the zest from the lemon and cut it into thin strips. Squeeze the lemon for juice.
Mix the lemon juice with the olive oil and lightly whisk in a separate bowl. Add salt, pepper, zest, and the parsley and garlic.
Wash the potatoes, place them in a high-sided saucepan, and boil them in their skins until tender. Cool slightly, peel, and slice. Immediately add the prepared sauce, cover, and shake well. Let the potatoes sit for 20 minutes.
