Ingredients
3 cups flour
2 eggs
1 cup water
salt
1000 g berries
1 cup sugar
400 g sour cream
Make the dough: combine flour with 1 cup water, eggs, and a pinch of salt. The dough should be firm. Roll it out thinly and cut out circles with a glass.
Mix the berries with sugar, let it sit for a while, and drain the juice into a separate bowl. Place the filling in each circle of dough, fold it in half, and pinch the edges. Cook in boiling salted water for 5-7 minutes after it floats to the surface.
Make the cream: combine the remaining juice with sour cream and 2 tablespoons of sugar. Beat with a mixer.
Using a slotted spoon, transfer the finished vareniki to a serving dish and top with the cream.
