Shrimp Noodles in Coconut Milk



Ingredients
10 shrimp
200 ml coconut milk
1 red chili pepper
1 clove garlic
1 tsp soy sauce
1 tbsp dry white wine
1 lemon
1 tsp fish sauce
300 g noodles
celery (greens)

Peel the shrimp, leaving the heads and tails on. This will make the sauce richer. Remove the seeds and membranes from the hot peppers, rinse, and chop. Chop the garlic.

Heat a couple of tablespoons of peanut oil (you can use another oil). Fry the garlic for about 30 seconds, add the fish sauce and soy sauce, cook for another half minute, then add the wine. Cook for another couple of minutes and pour in the coconut milk.

 Cook for 10 minutes, then add the zest and chili. Add the shrimp and cook for a couple of minutes. Add the cooked noodles, stir, and add the lemon juice.

Garnish with cilantro when serving.
