Ingredients
Cashews 1 cup
Walnuts 1 cup
Water 0.75 cups
Salt to taste
Tomato 1
White onion 1
Buns 2
Dill to taste
Parsley to taste
Lettuce to taste
Soak the cashews in water overnight. Blend the cashews with 0.75 cups of water in a blender, add 0.5 lemon, and half the walnuts. Season with salt and pepper to taste. Add the remaining walnuts and blend well to create a hummus-like consistency.
Cut the buns in half and toast.
Spread the buns with nut butter, top with tomato and onion slices, and season with pepper to taste.
Sprinkle with herbs and lemon zest or lemon wedges. Serve immediately.
