Zucchini with Meat in Batter



Ingredients
3 zucchini
300 g meat
1 onion
2 slices white bread
1 egg
Salt to taste
Pepper to taste
Garlic to taste

For the batter:
2 tbsp flour
2 eggs
3 tsp milk
Salt to taste
Pepper to taste

Slice the zucchini into 1.5–2 cm thick slices. If necessary, trim off the skin (if the skin is young and thin, you can leave it in). Scoop out the cores. If desired, you can use them to make mince – simply remove the seeds and mix them with the meat and onion.

Any ground meat will work for the filling. You can prepare it according to any of your recipes, or you can try this: soak the white bread in milk and then squeeze it out. Grind the meat, onion, and bread in a meat grinder until ground. Beat in an egg, add salt and pepper, and mix thoroughly until smooth, then beat until the mixture comes together.

Cover the prepared mixture and refrigerate for 30-40 minutes to rest. If you're short on time, you can cook it right away.

Fill the centers of the zucchini circles with the mixture. Press firmly into place.

For the batter, beat the eggs with a little milk, salt, and pepper. Roll each circle in flour. Dip it in the egg mixture.

Fry in hot vegetable oil until golden brown and cooked through.
Since the meat is raw, fry over medium heat to ensure it's fully cooked.

After frying, it's a good idea to cut open one of the zucchini circles and check the filling. If it's still a bit raw, you can finish cooking it in the oven, microwave, or place all the fried zucchini in a frying pan and simmer for a bit over low heat, covered.
