Walnut and Meringue Cookies



Ingredients
for the dough:
200 g butter
Vanilla
1 tbsp sugar
1/3 tsp baking soda
2 cups flour

For the meringue:
1 cup sugar
1 tbsp lemon juice
Walnuts

Mix the cottage cheese, butter, yolks, sugar, and vanilla thoroughly. Don't forget the baking powder or baking soda and vinegar. Then add the flour. The dough should be stiff and not sticky. Refrigerate and prepare the meringue.

Whisk the egg whites with the sugar and add the lemon juice. Beat everything with a mixer until stiff peaks form, so the meringue doesn't run off the spoon. Now divide the dough into 3 balls.

 Roll out the meringue, spread it evenly with the meringue, and sprinkle with a little chopped walnuts. Roll it up and place it on a baking sheet lined with baking paper. Cut it diagonally into equal pieces and bake in the oven.

Important: Use a knife to cut the roll on the baking sheet and do not pull it apart. Bake at 180°C until golden brown. Only after it has cooled completely, break it into pieces and serve. Cool and sprinkle with vanilla powder.
