Pumpkin Casserole with Cinnamon and Lemon



Ingredients
Sugar 1 cup
Eggs 4
Vegetable oil 2 tbsp
Semolina 1.5 cups
Flour 5 tbsp
Pumpkin 750 g
Salt to taste
Baking soda 1 tsp
Vanillin 1/2 tsp
Cinnamon 1/2 tsp
Lemon zest 1 tsp

Whisk the egg whites until foamy with 0.5 cups of sugar and a pinch of salt. Whisk the yolks separately with the remaining sugar.

Whisk the yolks with the remaining dry ingredients, grated pumpkin, and a teaspoon of baking soda quenched with vinegar. Fold the whipped egg whites into the mixture.

Bake at 180°C for 30-40 minutes.
