First, let's make the cookies. In a bowl, mix the sugar and butter. Add the egg yolks and sifted flour. Knead the dough and refrigerate for half an hour. Roll out to a thickness of 0.5 cm, cut out horse shapes with cookie cutters, brush them with beaten egg, and bake in an oven preheated to 190°C (350°F) until bright yellow. Let the cookies cool slightly. Then, decorate. First, the outline.
The outline is needed to make it easier to fill the horse's head with a different color of icing. For example, for the white color, use powdered sugar diluted with lemon juice.
Fill the muzzle with white. For the brown, use chocolate melted with cream or butter. You can also use ready-made confectionery paints.
The icing or paint must dry before applying the next layer. This will take about an hour. Then apply the details—the harness and the eyes. Here, you can again use icing (for the harness) and chocolate (for the eyes).
Use black confectionery paint or melted dark chocolate to paint the mane, eyelashes, and nostril.
