Banana Biscotti with Pistachios



Ingredients
Flour 1.8 cups
Sugar 1/4 cup
Baking powder 1 tsp
Salt 1/4 tsp
Banana 1
Vegetable oil 1 tbsp
Vanilla extract 1 tsp
Egg 1
Pistachios 1/3 cup

Preheat oven to 180°C. In a large bowl, whisk together the sifted flour, sugar, salt, and baking powder.

In another bowl, combine the mashed bananas, vanilla extract, oil, and egg.

Add the wet ingredients to the dry ingredients and knead until a soft dough forms. Add 1 tbsp water if needed.

Add the chopped pistachios and knead briefly until evenly distributed.

 Place the dough on a floured surface and roll it into a sausage shape. Transfer it to a parchment-lined baking sheet, flatten it slightly, and bake for 20-25 minutes.

Remove the sausage from the oven and let it cool for 10 minutes. Reduce the temperature to 120°C (250°F). Cut into pieces approximately 3 cm thick, place them on the baking sheet, and bake for 15 minutes.

Flip the biscotti over and bake for another 15 minutes. Cool completely on a wire rack. Store in a tightly sealed container.
