Ingredients
5 eggs
200 g sugar
3 tbsp brandy
10 g baking powder
1/4 tsp salt
10 g vanilla sugar
350 g flour
300 g almonds
100 g pistachios
200 g dried apricots
100 g dried cranberries
Preheat oven to 160°C. If necessary, line a baking pan with parchment paper and grease it with oil.
Whisk the eggs in a mixer. When the eggs begin to foam, add the sugar, salt, vanilla, and brandy and continue beating for 7 minutes until light and fluffy.
Sift the flour and baking powder and gently fold into the egg mixture with a spatula until smooth. Add nuts and dried fruit and stir. Place in a pan and bake for an hour.
Cool the cake for 5 minutes, then remove from the pan. Store in a sealed container for up to a week. Serve with butter.
