Apple Pies


Ingredients
For the dough:
Flour 240 g
Sugar 50 g
Cinnamon 1/2 tsp
Salt 1/4 tsp
Cottage cheese 1% 170 g
Butter 60 g
For the filling:
Green apple 450 g
Sugar 1/4 cup
Butter 2 tbsp
Cinnamon 1/4 tsp
Water 4 tbsp
Starch 1 tbsp

Make the dough by mixing the flour, sugar, cinnamon, and salt. Add the cottage cheese and butter. Knead the dough until it becomes soft. Transfer it to a floured surface and knead it a little more, forming it into a ball. Wrap the dough in plastic wrap and refrigerate for 30 minutes while you prepare the filling.

 Peel and dice the washed apples. Place the sliced apples in a saucepan with the sugar, butter, and cinnamon. Heat over medium heat until the butter melts, then add 2 tablespoons of water. Cover and simmer for 10-12 minutes (the apples should be soft). Mix the starch with two tablespoons of water and add this mixture to the apples. Cover and simmer for another 1-2 minutes until the mixture thickens (it should become slightly jelly-like). Remove from heat. Let the filling cool for 15 minutes.

Preheat the oven to 190°C (375°F) and line 2 baking sheets with parchment paper. Roll out the chilled dough thinly. Using a knife, cut out 9 squares (15 x 15 cm) from the dough. Place a heaping spoonful of apple filling (or 1 tablespoon + 1 teaspoon) on one half of each square. Fold the other half over the filling and seal tightly. Place the pies on a baking sheet. Make 3 slits in each pie and bake for 25 minutes, until golden brown. Cool for 5-10 minutes.
