Ingredients
For the crust:
Flour 1.5 cups
Sugar 1/2 cup
Baking powder 1/2 tsp
Oatmeal 3/4 cup
Butter 110 g
Egg white
For the filling:
Strawberries 300 g
Sugar 1/4 cup
Starch 1 tbsp
Preheat the oven to 180°C. Line a pie pan (24 cm or 20 cm) with baking paper.
Place the crust ingredients in a bowl and use a fork or knife to cut in the butter until the dough resembles loose crumbs. Reserve 1/4 of the mixture for topping. Place the remaining mixture in the bottom of the pan and press firmly into place. Wash and dry the strawberries, then mix them with sugar and cornstarch. Let them absorb the sugar, then arrange them on top of the base.
Sprinkle the remaining crumbs from the base over the top. Bake for 50 minutes, until golden brown.
Cool for about 5 minutes before removing from the pan.
