Ingredients
Cookies 300 g
Sugar 1/4 cup
Butter 80 g
Egg yolk 3
Condensed milk 1.5 cans
Lime juice 180 ml
Crush the cookies using a food processor or rolling pin and combine the crumbs with the sugar. Melt the butter and pour it into this mixture.
Place the future pie crust in a springform pie pan, smooth the bottom, and press it down. Bake in an oven preheated to 170°C (350°F) for about 8 minutes, then cool thoroughly.
Place the egg yolks and condensed milk in an ovenproof bowl, place in a saucepan of boiling water, and whisk until fluffy. Gradually whisk in the lime juice.
Spread the lime curd over the pie crust and freeze for 3-4 hours. Remove 20 minutes before serving and let it come to room temperature.
If desired, the pie can be eaten frozen, like sorbet, and garnished with whipped cream.
