Ingredients
8 potatoes
Salt to taste
Pepper to taste
12 eggs
First, bake the potatoes.
Preheat the oven to 200°C (400°F) and bake for 45-60 minutes.
Then peel and grate the potatoes. Preheat the oven to 220°C (420°F).
Spray muffin tins with vegetable oil (or grease them with butter) and place 3-4 tablespoons of grated potatoes in them.
Press the potatoes to the edges of the tin to form a basket. Sprinkle with salt and pepper and bake for 15-20 minutes.

Watch the tarts carefully to prevent them from burning! Once they're golden brown, remove from the oven and let cool. Crack an egg into each tart, season with salt and pepper, and bake in the oven for about 15 minutes. Remove the tarts from the pans with a knife and serve.
