Hazelnuts 125g
Almonds 125g
Dried apricots 100g
Figs 100g
Brown sugar 100g
Flour 60g
Cocoa powder 40g
Lemon zest 2 tsp
Cinnamon 2 tsp
Ground ginger 1/2 tsp
Honey 200g
Icing sugar 40g
Roast the hazelnuts in a frying pan, place them in a towel, and rub to remove the skins. Coarsely chop the almonds and cut the dried fruit into small pieces. Combine all ingredients and add finely chopped lemon zest. Mix the flour with the spices and cocoa powder. Add the mixture to the nuts and dried fruit, and stir.
In a small saucepan, combine the honey and sugar and heat the mixture over low heat until the sugar is completely dissolved, stirring constantly. Bring the mixture to a boil. Pour the hot syrup into the nuts and dried fruit and stir quickly. Work quickly, as the mixture will thicken quickly.
Take a shallow baking pan, line it with parchment paper, and grease it with a little butter. Spoon in the dough and smooth it out with a spoon. Bake the pie in a preheated oven at 150°C (300°F) for 30-35 minutes. Cool the pie in the pan and dust with powdered sugar.
