Plum Galette with Curd Dough



Ingredients
for the dough:
Flour 150 g
Butter 100 g
Cottage cheese 100 g
Icing sugar 2 tbsp

For the filling:
Plums 300 g
Starch 1 tbsp
Cinnamon 1 tsp
Icing sugar 2 tbsp

In a blender, combine the flour and icing sugar. Add the cold butter and process until crumbly.

Add the cottage cheese to the crumbly mixture and mix again. If the cottage cheese isn't moist enough and the dough doesn't come together, add 1-2 tbsp of cold water (adding in small amounts). You should get moist crumbs that can be gathered into a ball.

 Form the finished dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

For the filling, use plums, starch, cinnamon, and powdered sugar. Depending on the plums' acidity, use more or less powdered sugar. Remove the pits from the plums and divide into 4-6 pieces, depending on their size.

Remove the dough from the refrigerator, place it on parchment paper, and roll it out to a thickness of 3-4 mm. Sprinkle the center with an even layer of starch, or mix the plum pieces with starch.

Arrange the plum pieces in the center, leaving 3-4 cm from the edge.

Sprinkle the plums with cinnamon and powdered sugar. Fold the edges of the dough over the filling. Bake in an oven preheated to 180°C for about 25-30 minutes, until done.

 Remove the galette from the oven and let it cool. Dust with powdered sugar and serve.
