Ingredients
Eggs 12
Cold-smoked salmon 170 g
Green onion 1/2 cup
Mayonnaise 1/4 cup
Red onion 4 tbsp
Capers 4 tbsp
Lemon juice 2 tbsp
Lemon zest 1 tsp
Ground black pepper
Hard-boil the eggs. Peel the eggs and cut them in half lengthwise. Remove the yolks and crumble them into a medium bowl.
Add finely chopped salmon, green onions, mayonnaise, onion, capers, lemon juice, lemon zest, and ground black pepper to taste to the yolks. Stir; if the mixture is too dry, add 1 tablespoon of mayonnaise.
Stuff the egg halves with the minced meat. Garnish with green onions and sprinkle with black pepper.
