Ingredients
200 ml water
50 g margarine
2 tbsp sugar
1 packet vanilla sugar
1/4 tsp salt
1 tsp dry yeast
3 cups flour
For the filling:
2 apples
4 tbsp black currants
1 tbsp flour
3 tbsp sugar
Dissolve the yeast in water, add salt, sugar, vanilla sugar, and 1 cup of sifted flour. Mix well. Pour in the margarine, adding the sifted flour in portions. Knead the dough until smooth, form into a ball, grease with vegetable oil, transfer to a bowl, cover, and set in a warm place for 1 hour.
Peel and core the apple, cut into small cubes, and combine the berries (still frozen), apple, flour, and sugar in a bowl.
Place the dough on a work surface, grease your hands with vegetable oil, divide the dough into 8 equal portions, form into balls, and line a baking sheet with oiled parchment.
Roll each ball into a small circle, place it on the baking sheet, and spoon a small amount of filling into the center, pressing lightly with your hands.
Cover the baking sheet with plastic wrap and let it rest for 15 minutes. Preheat the oven to 180-200°C and bake the vatrushki until golden brown. Cool the finished vatrushki on a wire rack and sprinkle with powdered sugar.
