Ingredients
Flour 350 g
Eggs 3
Fat 75 g
Cottage Cheese 250 g
Raisins 1/2 cup
Sugar to taste
Vinegar 9%
White breadcrumbs 50 g
Icing sugar
Separate the eggs into yolks and whites. Pour 25 g of fat into the flour, add the yolks, 2-3 drops of vinegar, and a little water (add water 1 tablespoon at a time when kneading). Knead an elastic, non-sticky dough, roll into a ball, and grease with a thin layer of fat.
Heat an empty saucepan of a suitable size over the stove and cover the dough. Let it rest for 25 minutes. Form the dough into an elongated log and roll it outward from the center until translucent.
Let the dough rest for a few minutes to dry out (be careful not to let it dry out or become brittle).
For the filling, mix the cottage cheese with sugar and raisins. Beat the egg whites until stiff and gently fold into the cottage cheese mixture.
Generously coat the dough with the remaining fat, sprinkle with breadcrumbs, add the filling, and roll into a log. Transfer to a greased baking sheet and bake in a preheated oven at 180°C for 40-45 minutes.
Cool the finished retesh, cut diagonally, and sprinkle with powdered sugar.
