Ingredients
for the dough:
85 g butter
150 g sugar
2 eggs
1/2 tsp vanilla extract
150 g flour
1.5 tsp baking powder
1 pinch salt
120 g milk
For one snowman:
25 g coconut flakes
1 tbsp condensed milk
Chocolate
Tangerine
For the frosting:
200 g cottage cheese
70 g powdered sugar
100 ml milk
Whisk the sugar and butter thoroughly until fluffy. Add the eggs one at a time, then the vanilla extract, half the dry ingredients (sift the flour with baking powder and salt), milk, and the remaining flour mixture. Divide the batter among the cupcake liners and bake at 180°C for approximately 20 minutes (check with a toothpick). Remove and let the cupcakes cool completely.
Mix the shavings with condensed milk, form three balls of varying sizes, and roll them in coconut flakes. Thread the resulting balls onto a toothpick, and draw eyes, a mouth, and buttons with melted chocolate. Cut a scarf and nose from a tangerine peel.
Mix all the frosting ingredients until smooth with an immersion blender, then spread them on the cooled cupcake. Sprinkle with coconut flakes and place the snowman on top.
