Ingredients
Flour 2.5 cups
Baking powder 2 tsp
Salt 1 pinch
Butter 160 g
Sugar 1 cup
Eggs 3
Pine nuts 1 cup
Cornflakes 4 cups
Icing sugar
Mix the flour, baking powder, and salt. Melt the butter and, while it's still hot, add the sugar. Whisk until an emulsion forms. Once it's cooled slightly, add the eggs and mix well again. Then pour in the flour mixture and mix until a thick dough forms. Stir in the nuts.
Using a bag and rolling pin, break the cornflakes into small pieces (but not crumbs). Using wet hands, take a small amount of dough, form into bomb-shaped cookies, roll them in cornflakes, and arrange them on a baking sheet, leaving a little space between them as they will expand during baking.
Bake for about 20 minutes at 180°C until golden brown. Cool on a wire rack and dust with powdered sugar.
