Ingredients
For the dough:
1 cup sugar
4 egg yolks
3 tbsp sour cream
600 g flour
250 g butter
3 tsp baking powder
For the filling:
2000 g apples
1/2 cup sugar
1 tsp lemon zest
1 tsp cinnamon

Preheat the oven to 180°C. Prepare three baking sheets (21x26 cm).
Mix the flour with the sugar and baking powder. Beat in the egg yolks, sour cream, and butter. Knead the dough with your hands. Divide it into 3 portions, wrap each portion in plastic wrap, and refrigerate for 20 minutes.
Then remove, roll out each piece, and place it, stretched, on a baking sheet. Bake for about 20 minutes. Cool.
Peel and finely chop the apples. Place them in a large saucepan, add sugar, cinnamon, and zest. Pour in 5 tablespoons of cold water and simmer until smooth.
Spread the cooled cake layers with the cooled applesauce. Sprinkle generously with powdered sugar.
