Ingredients
1 smoked chicken breast
1 mango
3 green onions
1 bunch arugula
7 pickled cucumbers
1/2 red chili pepper
For the dressing:
1 teaspoon whole grain mustard
1 teaspoon honey
1 tablespoon olive oil
Cut the chicken breast into small thin slices. Halve the mango, remove the pit, and peel. Slice the flesh. Thinly slice the cucumbers crosswise, and finely chop the pepper. For the dressing, whisk the olive oil, honey, and mustard together in a small bowl.
Place the arugula in a salad bowl and top with the chicken, mango, and gherkins. Drizzle with dressing and sprinkle with chopped pepper.
