Cabbage rolls with mushrooms and fish



Ingredients
300 g mushrooms
250 g salmon
1/2 cup dry white wine
1/2 cup rice
10 green onions
12 cabbage leaves
1 bunch parsley
30 g butter
30 g flour
200 ml milk
50 g butter

For the sauce:
200 g yogurt
1/2 lemon
Parsley
Salt
Ground white pepper

Pour wine into a hot frying pan and let it simmer for 3-4 minutes. Add the fish pieces to the boiling wine, season with salt, and simmer, covered, for 10 minutes, turning the fish halfway through cooking. Remove the fish from the pan and flake it into small pieces with a fork. Drain the remaining wine into a bowl.

Place the fresh mushrooms in a bowl of cold water, quickly rinse off any dirt, and remove from the water. Chop the mushrooms into small pieces. Peel and dice the green onions. Melt 30 grams of butter in a frying pan, then add the mushrooms and green onions. Sauté over medium heat, stirring constantly, until the mushrooms stop releasing juices. Sprinkle the mushrooms with flour and fry for another 2 minutes.

Pour in the wine from the bowl and the milk, stirring constantly. Bring the mushroom sauce to a boil and simmer for a minute, until the sauce thickens. Cool. Cook the cabbage leaves in salted boiling water until semi-cooked. Cook the rice or quinoa until tender.

Combine the fish, mushroom sauce, rice, and chopped parsley. Season with salt and pepper to taste. Stuff the cabbage leaves, folding each leaf into an envelope. Fry the cabbage rolls in butter until golden brown and delicious.

Alternatively, bake the cabbage rolls in the oven, pouring a little hot water into the bottom of the pan and drizzling the cabbage rolls with oil, or pouring crushed tomatoes, tomato juice, or broth (vegetable or mushroom).

Wash the lemon thoroughly, grate the zest, and squeeze out the juice. Mix the juice, yogurt, chopped parsley, and zest. Season to taste with salt and ground white pepper.

Frying the cabbage rolls in a frying pan gives the cabbage leaves a pleasant crunch, contrasting with the soft filling. Stewed cabbage rolls have a more traditional flavor, but are lower in calories.
