Baked Pumpkin and Feta Cheese Salad



Ingredients
1 bunch lettuce
100 g feta cheese
1/4 pumpkin
1 pinch coriander
1 pinch cumin
ground black pepper
salt
butter

For dressing:
1 tsp honey
1 tbsp lemon juice
3 tbsp olive oil
Salt
Ground black pepper

Slice the pumpkin into 2-3 cm thick segments at the widest part, remove the seeds and soft core. Season both sides of the pumpkin with coriander, cumin, pepper, and salt (you can add a little ground star anise to this quartet) and fry in butter or a mixture of butter and olive oil until golden brown on both sides.

 Transfer the pumpkin to a baking dish and bake in the oven at 180°C for 10-15 minutes; the pumpkin should be soft but still hold its shape.

Combine the dressing ingredients and whisk with a fork until smooth.

When the pumpkin is done, let it cool slightly, peel, and dice.

Divide the coarsely torn salad greens among serving bowls and top with pumpkin pieces and soft, salty feta cheese, also diced.

Pour the dressing directly onto the bowls and serve immediately.
