Ingredients
10 shrimp
1 bunch lettuce
60 g Dor Blue cheese
1 grapefruit
1 slice ginger
1 tbsp lemon juice
mint
1 tbsp olive oil
salt to taste
Prepare the shrimp: boil and peel them. Finely chop the ginger and fry it with the shrimp in a little olive oil until golden brown. Let cool.
For the dressing, blend a small bunch of mint leaves, 2 tbsp olive oil, 1 tbsp lemon juice, and salt. The leaves should be very finely chopped.
Rinse and dry the salad, then arrange it on a plate. Drizzle with half the dressing. Then add the cooled shrimp, peeled grapefruit wedges, and diced cheese. Drizzle with the remaining dressing.
