Ingredients
3 eggs
1 avocado
2 tbsp natural yogurt
Salt to taste
Pepper to taste
Boil the eggs. Separate the egg whites from the yolks and cut them into cubes. Coarsely chop the avocado.
Mix the egg yolks, avocado, and yogurt and mash with a fork until smooth. If the avocado is not very ripe, you can puree it in a blender.
Mix the previously chopped egg whites with the avocado mixture. Season with salt and pepper to taste.
This salad is great spread on bread, made into sandwiches, or wrapped in thin pita bread.
