Ingredients
200 g zucchini
1 carrot
1 onion
1 tbsp cilantro
1 tbsp 6% vinegar
2 cloves garlic
2 tbsp vegetable oil
Salt to taste
Ground black pepper to taste
Cut the zucchini into thin strips (like noodles) or ribbons (using a vegetable peeler). Grate the carrots on a medium grater. Cut the onion into thin half rings. Finely chop the garlic and crush it with the blunt side of a knife.
Add finely chopped cilantro, vinegar diluted with 1 tbsp water (if you like vinegar, you can add more, or do not dilute it with water), vegetable oil, salt and pepper to taste to the remaining ingredients. Stir and let sit for 10-15 minutes.
