Ingredients
1/2 Napa cabbage
1 tomato
1 onion
100 g feta cheese
1 avocado
1 handful black currants
Olive oil
Salt
Pepper
Wine vinegar
Cut the cabbage into strips. Cut the onion into half rings and marinate them in wine vinegar. Cut the tomato into wedges. Mix the vegetables. Add a little salt. You don't need a lot of salt; you'll have salt left in the dressing.
Make the avocado dressing. Peel the avocado, remove the pit, cut into pieces, and sprinkle with lemon juice to prevent browning. Mash it with a fork or blender. Add 2-3 tbsp. olive oil, salt, and pepper to taste.
Arrange the vegetables on a platter, drizzle lightly with olive oil, and spoon the dressing into the center. Crumble the feta cheese on top and sprinkle with blackcurrants. Cranberries can be substituted for the blackcurrants.
